Now that we have Christmas and Valentine’s Day over us, it’s time for the next big day…PANCAKE DAY!
If you’re anything like me you’ll eat nothing but Pancakes on Shrove Tuesday. We have an excuse? Although, it’s always nice to have a healthier option and I’ve got the perfect recipe for you.
Recently, there has been a craze for the “two ingredient Pancakes” – bananas and eggs. But I’ve adjusted this to give the Pancakes more flavour and making them more substantial.
Ingredients
1 banana
2 eggs
3 tbsp coconut flour
Handful of raspberries
Handful of blueberries
Honey for drizzling
Method
Throw the banana, eggs and coconut flour into your blender and whizz until smooth (usually around 10 seconds).
Heat a non-stick pan at a medium heat on the hob, pour in a tiny bit of rapeseed oil to prevent any possibility of sticking.
Pour in a pancake size amount of the mixture into the pan. Let the mixture heat until it begins to bubble, then flip. Repeat until you run out of mixture (you should get 3 to 4 Pancakes out of this mixture).
Once all Pancakes are ready, throw the raspberries and blueberries on top then drizzle with honey.

They looks so yummy! Unfortunately I’ve tried the two ingredient pancakes before and there was just something that wasn’t right for me but I’m glad you got them to work for you. Happy (almost) Pancake Day! ❤
