Pesto pasta, pesto chicken, pesto and salad, pesto risotto… it can be teamed with any great meal! After having not eaten the Italian delight for years I decided to make my own fresh sauce. I made a little change to mine that may not make it a traditional pesto. I’m not a huge lover of cheese, especially parmesan, which is often included in pesto. Therefore I chose not to add it to my recipe, but if you’re a fan go ahead and add it!
Ingredients
30g basil
2 cloves of garlic
Juice of 1 lemon
40g pine nuts
5 Tbsp extra virgin olive oil
Method
Give the basil a quick wash.
Slice the lemon and juice it into whatever you will be making the pesto in (I used a blender).
Crush the garlic cloves.
Place all ingredients into a blender and blitz until green.
I enjoyed my pesto on top of chicken and courgetti! Try my idea or on a pasta dish.
